A Swedish woman (Birgitta Hedin-Curtin) and a Clare man (Peter Curtin) took it upon them in 1989 to set up a small smokehouse which expanded over the last two decades to become one of Ireland's best known artisan producers of Organic Smoked Salmon, Mackerel, Trout and even Smoked Gouda Cheese.
